Packed with vitamins and chock full of goodness, this delicious smoothie is made with kale, cucumber, apple and dates. But really, you can flavor it with whatever goodies you like.

We know that you might be thinking, "Kale smoothie…what the heck?!" But trust us, it's so deliciously sweet you may find yourself craving it on a daily basis.

Making the Smoothie
Ingredients
4 or 5 kale leaves
1/3 cucumber (approx. 1 cup)
1 to 2 apples (1 cup)
2 dates (or other sweetener)
1 1/2 cups ice cubes
3 cups liquid (water, coconut water or non-dairy milk of choice)
Kale is the main power in this smoothie. Any of the other ingredients can be substituted with celery, spinach, pears, bananas and kiwi, for example. In fact, you can even add an avocado, if you like, or fresh ginger and nuts (cashew nuts work particularly well).
First, prepare your blender. Assemble your ingredients and wash the vegetables.
To make the smoothie, place everything into the high-speed blender and blend for a couple of minutes or until smooth and creamy. Taste and adjust your flavors and re-blend if desired. Serve immediately.
If desired, a scoop or two of protein powder can be added for extra bulk.

Went to the grocery this morning..... but didn't buy kale, because didn't know that I will need it .... it will be for tomorrow, because we limit to go outside cause of the covid-19
so will try the white bean hummus recipes instead today
I tried this smoothie today - but I replaced apple (as I didn't have apples) with pineapple chunks (frozen). I also added apricots and prunes to the mix - although I could have not added the prunes as the taste was a bit off. I also used a bit of coriander at the end and ceremonial grade cacoa (a dash of it) as its high in anti-oxidants and magnesium. It was tasty!
I made this smoothie with unsweetened soy milk. Not great, I think the milk overpowered the very light taste of cucumber and apple. I did like the refreshing taste of the cucumber.

This depends on your preference. There are a few options:
1- leave it out all together;
2- add 1/2 apple or 1/4 cup of kale.
You could also think about peeling the cucumber, and removing the seeds, if you do not have an allergy.
The flavors of this smoothie are really good.

Hello, Kenley-- thanks for writing. Yes, you can use an immersion blende. I would suggest using a large, tall container, like a Mason Jar, and adding liquids first, then the produce. Make certain to cut the produce into smaller pieces. If you are using greens, blend them with the liquid ingredients first, then, proceed with the other contents. Hope this helps. Enjoy! Char
